  1. Bloom the paste. Heat 1 Tbsp oil in a wide skillet or Dutch oven over medium. Add the curry paste and fry 1–2 min until it darkens and smells toasty. Add garlic and ginger, 30 seconds more.
  2. Split the coconut milk. Spoon the thick cream from the top of the can into the pan and let it sizzle and split with the paste, 2–3 min, until the fat separates.
  3. Brown the chicken. Push the paste aside, add the thighs, and let them pick up color, 3–4 min. They don't need to cook through yet.
  4. Simmer. Add the rest of the coconut milk, stock, fish sauce, and sugar. Bring to a gentle simmer and cook 10 min. Add bell pepper and onion, simmer another 5–7 min until the chicken is done and the peppers are tender-crisp.
  5. Balance and finish. Off heat, add the lime juice and taste. It should hit salty-savory first, then a whisper of sweet, then bright. Adjust: flat → more fish sauce; too rich → more lime; want heat → sliced fresh chili. Top with basil and serve over jasmine rice with lime wedges.

Sub firm tofu (pan-crisped first) or shrimp (added in the last 4 min) for the chicken, or swap green curry paste and Thai basil for a fresher version.
